Easter Egg Nests – Fun Treat Ideas

Easter Egg Nests

It is a cloudy day here in SoCal today, so I figured what better to do than make treats!  I am hosting Easter brunch for my family and friends on Easter Sunday and I wanted to try out a few recipes and I thought I would share.  I love-making Easter Egg Nests, not only are they adorable but they are ridiculously delicious as well.  Items needed to make these are marshmallows, butter, vanilla, and dry chow mein noodles, and small candies for the eggs.

  • 4 Cups Dry Chow Mein Noodles
  • 3 Cups Mini Marshmallows
  • 3 Tbsp Butter
  • 1/2 Tsp Vanilla
  • Candy Eggs, Mini Robin’s Eggs, M & M’s, or Jelly Beans

Line a cookie sheet with wax paper.  Over low heat, melt the marshmallows and butter in a large saucepan, once melted stir in the vanilla.  Pour the noodles into a large bowl.  Pour the marshmallow and butter mixture over the noodles, stir until well coated.  Rub some butter on your hands, this is important as it will all stick to your hands and not together.  Then take the noodle mixture and form it into small round bowls in-between the size of a golf ball and tennis ball.  Place the balls on the cookie sheet, with the back of a spoon, press the center of each ball to make a hollow indentation.  Next let the nests set until they are hard and then fill each nest with candy eggs.

Cute, Easy and Fun DIY Easter Treats

We love to make treats to give out in my son’s class for pretty much any holiday, and I wanted to share this super cute idea I found for Easter treats.  It is a little play on s’mores, use two graham crackers, 1 tiny chocolate bar, and a marshmallow peep, wrap them up in plastic and you are done.  To make it even more cute write a note from your child and include it inside.  Enjoy!  For another fun Easter treat idea click here.

Chicken Tortilla Soup – Crock Pot Recipe

My house smells so good right now because of this soup!  Generally I’m not a huge crock pot fan but this is so easy and delicious I had to share.  All of the ingredients I purchased are from Trader Joe’s so some of the items are kind of specific.

  • 4 Boneless, Skinless Chicken Breasts
  • 30 oz. Organic Low Sodium Chicken Broth
  • 2 Green Onions chopped
  • 1 Small Can Tomato Sauce (or if you only have large can just use half of it)
  • 1 Small Can Fire Roasted Diced Green Chiles
  • 1 Can Whole Kernel Corn
  • 1 Can Diced Tomatoes
  • 1 Can Organic Black Beans
  • 1 Package Trader Joe’s Taco Seasoning Mix
  • 1 Tablespoon Worcestershire Sauce
  • 1 Tablespoon Trader Joe’s Crushed Garlic

Combine all ingredients into your crock pot (except the black beans, add the beans when only 2 hours left)  Set the cook time on low for 6-7 hours, after 3-4 hours shred chicken.  Once finished add cilantro, avocado, tortilla chips, shredded cheese and sour cream.  Add a lime for garnish.  Enjoy!

Philly Cooking Creme… it’s what’s for dinner!

Tonight for dinner I made Creamy Italian Chicken & Pasta Skillet and it took less than 20 minutes to make!  My biggest dilemma on Wednesday nights (my soccer night) is always what to make, and how can I make it quick, and I have found my answer… with the Philadelphia Cooking Creme!  Tonight I used the Italian Cheese and Herb Cooking Creme and it may be my favorite so far.  Cooking with my Green Pan is like a dream come true.  I have decided that my Green Pan is the best invention and have told my husband I want the whole set for my birthday, let’s just hope he listens!

Philadelphia Cooking Creme… so amazing!

Last night was the my first time using Philadelphia Cooking Creme by Kraft and it was so delicious!  My husband and son asked for seconds… which is amazing considering what a picky eater our 4-year-old son is!  This recipe was so simple yet so amazing I was shocked!  The menu for last night was Chicken Primavera with Pasta, the dish was cooked in my new Green Pan.  If you don’t have a Green Pan believe me you need one!  I didn’t know what I was missing and now I want to cook everything in it!  This Saturday on The Home Shopping Network chef Todd English will be selling these amazing pans and making dishes with Philadelphia Cooking Creme don’t miss it.
