Another great perk of being a Diamond Club Member is this little thing called Free and Easy Wednesdays!  Every Wednesday (except Opening Day), receive FREE Stretch Run Admission, FREE Program and FREE Seat along with HALF PRICE Beer (domestic drafts), Sodas and Hot Dogs at Stretch Run Concession Stands. Let’s be honest just the half price on beer is worth being a member! Also general admission tickets and clubhouse admission is half price when you are a member, so what are you waiting for?  For complete Diamond Club Member details click here.

How to sign up:

Bring a valid photo identification and present it at special Diamond Club booths at the Del Mar Racetrack or Surfside Race Place. Summer Fun for kids, ice cream in a bag!

by

Last year on the last day of school we made ice cream in a bag with my son’s class. The kids loved it, and it was surprisingly very simple to make. If you have younger kids like we did (they were in first grade) you may need to help with the shaking. I would recommend wearing a pair of gloves to avoid frostbite! We loved making ice cream in a bag, it is so easy and delicious!

  1. 1/2 cup half & half
  2. 1 tablespoon sugar
  3. 1/4 teaspoon vanilla
  4. 1 ziplock freezer bag small
  5. 1 ziplock gallon size bag (freezer bag works best)
  6. 3 cups crushed ice
  7. 1/3 cup rock salt
  1. Put first 3 ingredients in the smaller Ziplock bag and seal bag (Make sure it is closed). Put ice and rock salt in the larger bag and then add the filled small bag. Seal the large bag.
  2. Shake and squeeze bag until ice cream is thickened, about 5-10 minutes.
  3. Remove small bag, unseal, and eat out of the bag, poor into a bowl, or put on a cone.
  4. Add any toppings if you wish and enjoy!

Blue Apron – Dinner ingredients delivered

by

Cooking is one of my favorite things to do, I love my kitchen, I love all my kitchen gadgets, it is my happy place. I am however notorious for forgetting one or two of the ingredients needed to make something. It is hard to make chili without chili powder, but I’ve done it on one or more occasion. One of my husbands co-workers had mentioned Blue Apron to us and said she could give us a free week, so we said sign us up! Blue Apron delivers to your home all of the fresh ingredients needed to make a delicious meal for as many people as you wish. My husband and I decided to try the 2-person plan with three meals a week to start.

Blue Apron Box 1

When you sign up for Blue Apron you are able to choose between six different entrees. I am not sure why but if you choose one entree it may black out another entree and say it is unavailable. For 2 people doing 3 meals a week the cost is $59.94, so it works out to about $20 a meal for two. Blue Apron sends all of the ingredients to you for the week in one big box, so for us we had 6 meals and all the ingredients delivered on a Wednesday. I was so excited to receive my first box, it was like being a kid on Christmas.

The first meal I made was an Almond-Crusted Cod with snap peas & radish-red quinoa salad. It took about 45 minutes from prep to finish and I loved all the new ingredients I’d never used before. I am not a huge fan of fish which is why I wanted to try this dish first. If they could win me over on a fish dish I knew I would love everything else. It won my husband and I over big time! We both ate every bite.

This is where the competition and food pictures began. Every night around 7 my husband’s phone would start erupting with dinner photos. The picture below was our second meal, Piri-Piri Chicken with coconut smashed plantains and stewed collard greens. I had never cooked with plantains or collard greens before and was hesitant about what it would turn out like. This meal was one of our favorite out of the 9 meals I cooked for us. I believe it may have won best picture that night from my husband’s co-workers. It was so fun to have a competition, a cooking competition at that with all of the men my husband works with. He works for a TV sports company a big TV sports company and to see all these men cooking almost every night and sharing their stories the next day was so funny, but they are men and I suppose can make anything into a competition.

The City of Carlsbad will host free concerts in the park throughout the summer at different parks in Carlsbad. This is the 30th year of this fun-family event with the City of Carlsbad. There will be on-site food options, with new vendors with items like hot dogs, hamburgers, pizza, barbecue and Fro-Yo! In the past we have always brought our snacks with us but this year maybe we will try out some of the new food options. Bring low-back chairs, a blanket, snacks, and drinks if you would like. Glass is allowed at these events ONLY, wine and beer bottles are okay to bring, they do ask that you recycle.

The second concert at each park has fun things for kids to do as well, it is called Art at Jazz. Art At Jazz offers hands-on visual arts activities for younger TGIF Jazz audience members. Instructors and volunteers guide the children as they make works of art in planned activities.
