Carlsbad Last Concert in the Park 8/22

Tonight the City of Carlsbad will host the last free concert in the park of the summer.  NEW this year are the on-site food options, with new vendors with items like hot dogs, hamburgers, pizza, barbeque and Fro-Yo!  In the past we have always brought our snacks with us but this year maybe we have tried out some of the new food options and they are delicious!  Bring low-back chairs, a blanket, snacks, and drinks if you would like.  Glass is allowed at these events ONLY, wine and beer bottles are okay to bring, they do ask that you recycle.  Concert is from 6 to 8 p.m.

The Mighty Untouchables are a classy septet playing and singing Marvin Gaye, Michael Jackson, Prince, Santana, AC/DC, Stevie Wonder, The Temptations, Celia Cruz, Earth, Wind & Fire and more.

The 29th season of TGIF Concerts in the Parks has received generous support from the Carlsbad Friends of the Arts. Major support for the Opportunity Drawings, which are organized and conducted by the Friends, comes from Alaska Airlines.

No oil Carrot Zucchini Bread

This is my favorite recipe for carrot zucchini bread, we just made this again two days ago and I knew I had to share it.  I am always trying to make anything healthier, especially if it already contains sugar.  One of the reasons this bread is great is because there is no oil used at all.  Vegetable oil for this recipe would normally be about a cup, which would amount to nearly 2,000 calories and 220 grams of fat!  Apple sauce is an amazing substitute for oil while baking, saving calories and fat.

The next item we switch for a healthier version is whole wheat flour, while whole wheat flour and regular flower have the same calories the whole wheat is much better for you.  During the process of making white flour most of the nutrients and fiber naturally found in flour are lost.  Sometimes the nutrients are added back into white flour but not in its natural form, which is another reason white flour is so over processed. Below are the ingredients and directions to our delicious Carrot Zucchini Bread, enjoy!

  • 1 1/2 cups Whole Wheat Flour
  • 1 1/2 cups White Flour
  • 1 ts Salt
  • 1 ts Baking Powder
  • 1 ts Baking Soda
  • 2 ts Cinnamon
  • 1 ts Nutmeg
  • 1 cup Sugar
  • 1/2 cup Brown Sugar
  • 3 Eggs
  • 1 cup Apple Sause
  • 1 cup Grated Carrot
  • 1 cup Grated Zucchini
  • 1 1/2 cups Chopped Walnuts

Preheat oven to 350 degrees.

Mix together, whole wheat flour, white flour, salt, baking powder, baking soda, cinnamon and nutmeg in a Kitchen Aid mixer or mixing bowl and mix.  Next add the sugar, eggs and apple sauce and mix together.  Last add the carrots, zucchini and walnuts and mix.

Next put into greased (we used coconut oil spray from Traders) and put into bread pan, or into cupcake pan.  Let bake for about 50 min. or until it is cooked throughout the center of the bread.

Summer Movies in the Park

Summer Movies in the Park is a perfect chance to relax and enjoy a safe and special night under the stars with your family.    Arrive early to pick out a good seat!  Bring blankets or low back chairs to sit on while you enjoy the movies.  Bring a picnic dinner for your family to share as well.

Movies are all rated G or PG, the top movie this summer is Frozen (if you have a little girl this has been the movie for over a year!)  Movies like Monsters University, Planes, Rio 2 and Despicable Me 2 are also top favorites this year.  Each movie is at a local park all over both the city of San Diego and San Diego County.   All movies start at dusk (approx. 15 minutes after sunset). Del Mar Summer Concert Series

The Del Mar Racetrack has a great summer lineup of concerts which are all free with racetrack admission.  If you arrive after the last race, you ail be charged to concert admission price of $20.  Concert parking is $20, racetrack parking before the final race is $10 so try and get there early.  We love taking the coaster to the track, you may drink and not have to worry about driving.  The concerts coming up are great, Steel Pulse is one of my favorite bands.  I’m very excited to see who the ‘Special Guest’ is on August 22nd.

Summer Fun at Knott’s Berry Farm

Knott’s Berry Farm is fun for everyone!  This past weekend we were invited to see all of the Summer Fun going on at Knott’s Berry Farm and we loved it.  The new Camp Snoopy has three new rides this year including my son’s favorite the Linus Launcher.  Kids lay on Linus’ blanket and relive a classic Peanut’s moment as Snoopy grabs the blanket and launches kids up to 10 feet in the air.

The next ride was Pig Pen’s Mud Buggies, my son loved the all-terrain vehicle. But what he really loved was the bouncing, spinning and the bumps on this ride.  Tons of giggles and laughing was happening on this ride!

We pretty much hit up every ride in Camp Snoopy…. Flying Ace (flying with Snoopy) Timberline Twister (a mini roller coaster)  Rapid River Run (think white water rafting, without the water) Camp Bus (large school bus ride) and what visit would be complete without the High Sierra Ferris Wheel!  Once we hit up almost everything in Camp Snoopy we headed over to the Fiesta Plaza were we went straight to the Hat Dance.  The picture below is my son and I waiting in line for the Hat Dance ride.  He was so excited upon learning he was tall enough to go on without me he asked if I could just watch him, I of course let him go by himself, he felt like such a big kid!

Next we went on the ride you can’t miss while at Knott’s Berry Farm, its a tradition, the Calico Mine Ride!  It was actually one of Knott’s first rides back in the 60’s, of what life was like for miners in the 1850’s.  Earlier in the year this ride shut down for five months for a renovation and you can delinatley see all the changes, and it is pretty remarkable.

During the summer Knott’s Berry Farm offers special Summer Shows, our favorite was an ice show called Snoopy Unleashed!    The show is about Snoopy and him wanting to do and go where he wants… unleashed!  All of the performers are on ice-skates, and wow they are incredibly talented!  At one point one of the performers is hanging 40 feet up in the air!  There is fun music and singing accopmanying the show.  Snoopy Unleashed is only during the summer months, it is also a great place to cool off during the warm summer days, the show runs now until August 24th.
