Encinitas Easter Egg Hunt

It’s all about the kids! The City of Encinitas presents its annual Easter Egg Hunt Festival.  Adding to the fun in addition to the 20,000 eggs, this year there will be two live shows from Hulabaloo at 10:30am and  11:15.  Free children’s activities will be hosted by the City of Encinitas Parks and Recreation Department.

You are invited to make a day of it and enjoy Encinitas Community Park. Please bring your own basket or bag for eggs. Limited parking is available on-site at the park. Auxiliary parking is available at the Scripps Memorial Hospital Encinitas lower parking lots, accessed off of Devonshire Drive.

Egg hunt times are as follows:

• 10:15 – ages 4 & under- upper field, 5 & up lower field

• 11:00 – ages 4 & under- upper field, 5 & up lower field

• 11:45 – ages 4 & under- upper field, 5 & up lower field

Carlsbad EGGstravaganza 2017!

Carlsbad @ Poinsettia Park –  Saturday, April 15th, the annual EGGStravaganza Spring Festival will be held from 10 a.m. to 1 p.m. at Poinsettia Park.  Please note this is not a free event, the cost is $6 for the Activity card.  Which allows you to participate in what is called the “Egg Scramble,” plus tons of fun things for the kids to do in the Fun Zone with bounce houses, a giant slide, obstacle courses and  a chance to “soak the bunny.”  The kids will collect eggs in the ongoing “Egg Scramble” activity between 10:30 a.m. to 12:30 p.m.  Children race to collect assorted eggs on the baseball fields.  This activity sends groups of approximately 20 children of similar age into the out field to collect as many eggs as they can.

There will also be sampling from the Parks & Recreation Summer Camps program. Instructors will be on site to perform demonstrations and answer questions about their programs.

Activity card must be purchased for $6 to participate in “egg scramble,” crafts, fun zone or bunny balloon soak.Unlimited fun zone wristbands are also available for $6. To register in advance click here.

DIY Easter Treats

Easter Egg Nests 2

It is a cloudy day here in SoCal today, that is why I decided what better to do than make treats! I am hosting Easter brunch for my family and friends on Easter Sunday and I wanted to try out a few recipes and I thought I would share. I love-making Easter Egg Nests, not only are they adorable but they are ridiculously delicious as well. Items needed to make these are marshmallows, butter, vanilla, and dry chow mein noodles, and small candies for the eggs.

4 Cups Dry Chow Mein Noodles
3 Cups Mini Marshmallows
3 Tbsp Butter
1/2 Tsp Vanilla
Candy Eggs, Mini Robin’s Eggs, M & M’s, or Jelly Beans

Line a cookie sheet with wax paper. Over low heat, melt the marshmallows and butter in a large saucepan, once melted stir in the vanilla. Pour the noodles into a large bowl. Pour the marshmallow and butter mixture over the noodles, stir until well coated. Rub some butter on your hands, this is important as it will all stick to your hands and not together. Then take the noodle mixture and form it into small round bowls in-between the size of a golf ball and tennis ball. Place the balls on the cookie sheet, with the back of a spoon, press the center of each ball to make a hollow indentation. Next let the nests set until they are hard and then fill each nest with candy eggs.

Last year my son and I make enough for all the children in his class. The year before I made them for place settings on Easter Sunday. I took a tooth pick and small piece of paper and wrote everyone’s name and placed at each setting on the table. No one had to get up for something sweet after the meal! The Single Mom & Dating… Weird AF

Wow, the trials of being a single mom and dating, I had no idea things could get so complicated so quick. I left my husband of 12 years a few months ago. I was accused of first being a lesbian and then having multiple affairs with men, which of course neither are true. Had you told me then, that those were just the precursor to what would come I NEVER would have believed you.

Dating is weird, its difficult, its awkward, and what it isn’t is sexy. Literally the last thing I would think of when explaining dating would be sexy. Which is weird because the end goal is to meet someone you enjoy spending time with and eventually having sex. But dating is not what they write about in movies, Matthew McConaughey isn’t going to save you and then fall in love with you. I blame Hollywood, really what the hell? When I was in my 20’s stupid romantic movies were cute because I was young and dumb enough to believe that those things could actually happen. As a grown ass woman I now know not only do those things not happen it would be weird AF if they did. If I called a friend and told them a man saved my life and he was an attractive single doctor they would not believe me. Because that isn’t real life. Real life is dating a single dad, maybe he has older kids, maybe his kids are still young, maybe he is a weekend dad. But in every instance he isn’t a single attractive doctor saving your life, that is not real life.

Things can move faster when you are older, you know what you want, they know what they want and you are old enough to talk about it. That is all great and grand but when you are not honest with even yourself there will be a big problem. I thought okay I can date this guy and also date that guy, whats the harm? I’m not married, I’m single, which is a dangerous word to be honest. Somehow I convinced myself being single meant I didn’t have to be honest with even myself. Wherein lies the problem, how do we convince ourselves to do something we know we shouldn’t be doing? I started falling right back into the pitfalls of why I left my husband with a guy I dated for a while. Apparently I wanted to fall right back into my last relationship, where I was comfortable. But then I remembered this is my life, why am I again putting someone else’s needs before my own? The only person or rather little people who should and always will come first are children. No if ands or buts about it, children always come first, whether it be their children or yours, they come first.

Right now I am madly in love, the love that only happens once in a lifetime, he stole my heart. He is the sweetest soul I know and my life would be ruined forever if anything happened to him. I am lucky to have him, and that he calls me mom.

The above picture is from a few years ago my son, niece and some friends on the wagon ride, which is an additional charge but it is well worth it, the kids loved it. There are more fun things for kids to enjoy like the Sweet Pea Maze, which my mother-in-law and I got lost in but my son found his way out within a minute. For over sixty years, Mother Nature has transformed the rolling hills of North San Diego County into one of the most spectacular and coordinated displays of natural color and beauty anywhere in the world. The nearly fifty acres of Giant Tecolote Ranunculus flowers that make up the Flower Fields at Carlsbad Ranch in Carlsbad, California, are in bloom for approximately six to eight weeks each year – from early March through early May- literally bringing the famous fields back to life. This annual burst of color, which has become part of the area’s local heritage, also is one of nature’s official ways of announcing the arrival of spring here in Southern California.

Legoland California $30 one day only

The Kid’s College Community Day at LEGOLAND® California is coming soon! On Sunday April 30, 2017 from 12:00 p.m. to 8:00 p.m. you may gain entry into Legoland for only $30!

Every year LEGOLAND®  hosts a Community Day to say thanks for being such great neighbors. LEGOLAND®  will also donate $5 of every $30 Legoland California ticket sold to the Kid’s College, which is a non-profit organization. The Kids College provides extended learning programs to children of North San Diego County.
